From gas rough-in to finished countertop — what the construction process looks like on a Naples estate, and why the kitchen has to be designed before the pool deck is poured.

Most outdoor kitchens on Naples estates — in Port Royal, Pelican Bay, Grey Oaks, and similar communities — are installed after the pool deck is already set. The result is predictable: the gas rough-in runs through finished pavers — which means cutting into the deck to trench a new line. The countertop height does not align cleanly with the pool coping elevation because nobody coordinated those numbers when the deck was designed. The shade structure was sized without knowing where the cooking surface would land, and the electrical conduit is now an afterthought run that compromises both access and aesthetics.

These are not difficult problems to prevent. Every one of them is a coordination failure — a kitchen designed in isolation from the estate environment it is being installed into. When the kitchen is designed at the same session as the pool, the hardscape, and the covered structure, the sequencing that drives all of those problems disappears. Gas is roughed in before the deck is poured. Countertop height is set against pool coping elevation before concrete goes down. The shade structure is sized around the cooking footprint before anyone picks a roofline. That is the build process this guide describes.

Standard Kitchen Configuration

An estate outdoor kitchen is not a freestanding grill with a side table. It is a permanent structure with utility infrastructure, permanent cabinetry, and a countertop surface designed for outdoor conditions. These are the elements of a standard estate kitchen configuration:

Gas Permitting in Collier County

Gas rough-in is the utility that causes the most project sequencing problems on Naples outdoor kitchens. All gas work is permitted through Collier County Growth Management — the one where the permit timeline surprises clients most often. Here is what the permit process actually looks like:

Who pulls the permit. Gas rough-in requires a licensed gas contractor working under the general contractor's license. We coordinate this directly — you do not source or manage a separate gas contractor. The gas permit application is filed by our team as part of the overall permit package. What requires a permit. Any new gas line — including extension of an existing line — requires a Collier County gas permit. This covers the underground run from the LP tank or gas meter to the kitchen island, all connection fittings, pressure testing, and final inspection. There is no shortcut for this process. Any outdoor kitchen that has operating gas appliances without a permitted rough-in is an open liability on the property.
Typical timeline. Gas permit applications in Collier County currently run 3–6 weeks for approval under normal conditions. This timeline is the primary reason the kitchen must be designed and permitted concurrently with the pool and hardscape build — not afterward. A permit submitted after the pool deck is poured means waiting 4–6 weeks to start gas installation on a project that is otherwise complete.
Required inspections. Collier County requires a rough-in inspection before backfill (for underground runs) and a final inspection after all connections are made and appliances are installed. Both must be scheduled through the county and require inspector access to the property. We manage both inspection appointments as part of the project.
LP vs. natural gas. Most Naples estate properties are not on a natural gas main — LP (propane) tank installation is the standard configuration. The tank location is determined at design: it must be accessible for delivery truck fill, setback from the structure per code, and visually screened from the entertaining area. Properties in areas served by Teco Peoples Gas or other providers may have natural gas available — confirm during design. LP and natural gas require different regulator and fitting configurations; the system is designed around the fuel source, not retrofitted.

SWFL-Specific Material Requirements

Salt air and humidity drive material selection on Naples outdoor kitchens harder than in most of the country. The Gulf Coast environment is the determining variable — not preference, not cost optimization. These are the specification floors, not the premium upgrades:

316 stainless for all appliances. 304 stainless — used in standard residential appliances and many outdoor kitchen product lines — corrodes visibly within 2–3 years at coastal sites. 316 stainless contains molybdenum, which resists chloride attack from salt air and pool chemical splash. Marine-grade cabinetry. No wood composite, MDF, or standard ply in SWFL outdoor conditions. Marine-grade polymer (HDPE) cabinetry or 316 stainless access doors set into a CMU island core are the correct specifications. Countertop: porcelain or granite. Porcelain slab handles direct SWFL UV and tropical rain without annual sealing. Granite is appropriate if sealed on installation and annually. Soapstone absorbs oil and stains in an outdoor environment. Marble etches from any acidic exposure and is not suitable for SWFL outdoor kitchen use. Shade structure framing. Powder-coated aluminum is the minimum specification — no standard steel. Standard steel framing corrodes at the coating failure points within 3–5 years in coastal SWFL conditions. Powder-coated aluminum does not rust and requires only periodic cleaning. Integration with Pool Deck and Hardscape

The outdoor kitchen does not exist in isolation from the rest of the estate environment. Its slab, its utilities, and its height are all set in direct relationship to the pool deck — which is why designing them simultaneously is not optional, it is the process.

The kitchen slab. The outdoor kitchen sits on a concrete slab or paver surface designed for the kitchen footprint and load. The slab elevation is set against the pool deck elevation — the two surfaces need to read as continuous, not as a raised structure stepping down from a finished deck. This elevation coordination happens at design, not during installation.
Countertop height relative to pool deck. Standard outdoor kitchen countertop height is 36″ from finish surface. If the pool deck is elevated or if there are grade changes between the pool area and the kitchen, the countertop height must be adjusted to maintain a functional working surface and consistent sightlines from the entertaining area. This is a design decision, not a field adjustment.
Electrical conduit. The kitchen requires dedicated electrical circuits for the refrigerator, outlets, and any integrated lighting or audio. These conduit runs are coordinated and sleeved during hardscape installation — not trenched through finished pavers after the fact. One conduit run, sized for all anticipated circuits, is the correct approach. Additional conduits can be sleeved for future use at nominal cost when the hardscape is open.
Plumbing for the sink drain. The sink drain must exit the island base and connect to either the estate's sanitary sewer or a dedicated dry well, depending on municipality. This drain run is coordinated with the drainage plan before hardscape is set. In SWFL's flat topography, gravity drainage from a kitchen sink that is at pool deck grade requires careful routing — this is a design engineering problem, not an installation problem.

The Shade Structure Decision

The covered structure over the outdoor kitchen is not an aesthetic finishing detail — it is a design driver that changes the kitchen layout, the permitting path, the engineering requirements, and the usability of the space. This decision belongs at the design session, not after the kitchen island is built.

Pergola (open lattice). Provides shade and architectural framing without a solid roof. In Collier County, a freestanding pergola typically does not require a building permit if it meets setback requirements and is below a certain square footage threshold — confirm with county at design phase, as thresholds change. A pergola attached to the primary dwelling is treated as an addition and does require a building permit. Pergolas do not provide rain protection: a July thunderstorm ends an outdoor entertaining session within minutes under a pergola. For year-round outdoor kitchen use in SWFL, a pergola is a compromise specification.
Fixed roof / solid pavilion. A solid-roof structure attached to or adjacent to the primary dwelling requires a building permit, structural engineer calculations, and wind load certification in Collier County. The engineering requirement exists because Collier County is a high-wind zone — the roof structure must be engineered to withstand the wind loads specified by Florida Building Code. Permit approval for a solid-roof structure runs 4–8 weeks. The payoff is year-round usability in all weather conditions, which for a $60,000+ kitchen investment is the correct baseline specification.
Retractable shade systems. Motorized retractable awnings or shade systems provide flexible coverage without a solid roof. In most cases, retractable systems do not require a structural engineering review, though electrical permits may apply for motorized systems. The limitation: retractable systems in SWFL have a defined wind speed rating (typically 20–25 mph) beyond which they must be retracted. A significant thunderstorm requires retracting the system. For a dedicated outdoor kitchen, a retractable system is an intermediate specification between a pergola and a solid roof.
Shade sails. Shade sails are a design aesthetic, not a weather protection system. They provide UV shade on clear days. In SWFL's afternoon rain pattern, they are not a functional weather solution for an outdoor kitchen. We specify shade sails where the aesthetic is appropriate and the client understands they are a daytime, dry-weather element. We do not specify them as the primary coverage for a kitchen that the client intends to use for year-round entertaining.

The shade structure decision affects the kitchen design directly: countertop height may change if a solid-roof structure sets ceiling clearance constraints. The lighting plan changes completely — a fixed roof supports recessed lighting, pendant fixtures, and integrated ceiling fans that are not possible under a pergola. Cooking surface clearances from overhead combustible elements are determined by the structure type. These are not finish-out decisions. They are structural decisions made at the same session as the kitchen layout.
